Recipe: Meatloaf for 4

** Meatloaf for 4 **


INGREDIENTS
1/2 tbsp evoo
1.25 lbs ground beef, 4% fat
1 large egg
8 oz tomato sauce, divided
3/4 c old fashioned oats
2 tbsp dry onion flakes
1 tsp sea salt 
Dash of pepper
1/2 tsp paprika
1 tsp McCormick basil/garlic seasoning blend


DIRECTIONS
In a mixing bowl combine all ingredients except 4 oz of tomato sauce and evoo.  Mix well.  Place mixture in greased 8x5x2 baking dish (use evoo to grease pans bottom and sides) forming mixture to a 6x4x1.5 loaf. Bake for 50 minutes at 350 degrees. Drizzle remaining tomato sauce to top of loaf during last 10 minutes. Serve with your favorite salad or green vegetable.

Bake @ 350 degrees for 50 min

Recipe: Enchilada Casserole

ENCHILADA CASSEROLE

Recipe from Savoring the Southwest Cookbook 
Published by the Roswell Symphony Guild, 1983, Roswell, NM 

9x13 greased casserole dish 
Preheat oven to 350 degrees 
Serves 8 - 10 

INGREDIENTS:


1 1/2 pounds of ground beef 
1 large, onion, chopped 
1 teaspoon chili powder 
1 teaspoon salt 
1 teaspoon black pepper 
1 can (10 3/4 ounce) cream of mushroom soup 
1 can (10 3/4 ounce) cream of chicken soup 
1 can (4 ounce) chopped green chiles 
1 can (4 ounce) taco sauce 
1 can (10 ounce) enchilada sauce 
12 corn tortillas (qty to vary depending on how you modify this recipe) 
1/4 pound grated chedder cheese (we us a larger amount of grated colby/jack cheese) 


COOKING DIRECTIONS:


Brown ground beef in skillet. Add onion, chili powder, salt and pepper, and mix well. Add remaining ingredients, except the tortillas and cheese, and simmer 6 to 8 minutes. In a greased 9 x 13 banking dish, place one layer of tortillas, and pour over some of the meat mixture. Repeat until all the tortillas and meat mixture are layered. Sprinkle cheese over top and bake at 350 degrees for 30 minutes. 


Serves 8 - 10.

SNICKER DOODLE COOKIES


INGREDIENTS

1 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
2 tsp cream of tartar
1 tsp soda
1/4 tsp


DIRECTIONS

Preheat oven to 400°F.

Mix shortening, sugar and eggs together.  Add to mixture flour, cream of tartar, soda and salt.

Roll into balls.  Roll balls in a mixture of part cinnamon part sugar.

Place 12 balls on an ungreased cookie sheet, mash balls with fork/finger,  place in preheated oven and bake 7 - 10 minutes at 400°F




Recipe: Red Enchilada Sauce

ENCHILADA SAUCE


INGREDIENTS
1 tbsp olive oil
1 tbps garlic powder
1 tbps onion powder
1 tbsp cumin
2 tbsp mild chili powder
4 tbsp flour
4 cups chicken broth
1 (8 oz) can tomato sauce



DIRECTIONS
Mix spices and flour in olive oil in saucepan over medium heat until fragrant and starting to brown.


Slowly add chicken broth and tomato sauce to mixture.  Cook and stir until thickened.


Great sauce for not only enchiladas but also add as liquid one part sauce to one part water for use in making Spanish rice!!






Recipe: Aunt Jean's Christmas Cookie

Aunt Jean's Christmas Cookie


INGREDIENTS

1 cup brown sugar
1/2 cup margarine
4 eggs, beaten
3 tsp soda
3 tbsp buttermilk
3 cup flour
1 tsp cloves
1 tsp cinnamon
1/2 cup grape juice
2 lb pecan
1 lb canndied cherries
1 lb pineapple
1/2 box white raisins



DIRECTIONS

Cream together first two ingredient and blend in eggs.

In another bowl mix together baking soda and buttermilk.

In another bowl mix flour, cloves and cinnamon.

Add, alternating, flour mix with buttermilk into the creamed mixture. Add grape juice and mix well.  Add nuts & fruits & mix well.

Drop on cookie sheet covered by parchent paper and bake at 325°F for 12 - 25 minutes.







Recipe: Cizon's Guacamole

Cizon's Guacamole



INGREDIENTS
6 med avocados
1 cup onion, diced
1 medium tomato, diced
1 tsp garlic powder
1 tsp onion powder
1 tsp garlic, Spice World minced (in jar)
1 jalapeno, deseeded and minced
6 serrano chiles, deseeded and minced
2 tbsp cilantro, finely chopped
Lime Juice, from 1/2 of a lime
4 tbsp Sour cream
1 tsp salt

DIRECTIONS
Split avocados in half and using spoon take meat out of shell and place in bowl.

Mash avocado

Add garlic powder, onion powder, minced garlic from jar, minced jalapeno, minced serrano chiles, cilantro, onion, tomato, lime juice, sour cream and salt.

Mix together.



SERVES 16 - (1/4 cup ea)

Recipe: Corn on the Cob


CORN ON THE COB
(boiling for taste)




DIRECTIONS
  • Fill your pot with water.
  • Add 1/2 cup of sugar.
  • Drop in your corn.
  • Bring everything to a boil, making sure the sugar is dissolved in the water.
  • Boil for no longer than 8 minutes.
  • Remove from the water and let it cool enough for handling and eating.

From AA to JD:  Preparing to Return To School
The To Do List for Spring/Summer/Fall 2012

DEFINE IT
PLAN IT
WRITE IT DOWN
WORK THE PLAN
KEEP ON TASK 
and so the story begins.

For many of the past 12 years I have heard the phrase 'find a way, make a way' so I decided that I was going to establish the purpose, set the plan, break the plan into goals or sections in order that I can work it and obtain them.

I have finally decided what I want to be when I grow up.  Really I had a good idea of this purpose a few years back however I let life, those who thought I'd make an awesome MK consultant-potential director, my work-a-holic tendencies as well as myself with my own wishy/washy ideas of what I thought I should be keep me from gaining ground on my purpose.  Aside from being a wife and mother I must find fulfillment that will allow me to continue/re-establish growth in my life.  A life, my life, that I believe has become stagnant over the past couple of years.  I've enjoyed being a wife and a Momma as well as spending the past year diving into domestic living (i.e. cooking, etc.) and will continue to be supportive to my husband and my kiddos; but it is also time for Momma to finally finish school so she is complete.  I just and I must finish school...it is what I feel I must do.  Now that my kids are grown it is time for me get on with my life and find this growth.  I do have after all at minimum 45 years to live if I plan to keep up with my PaPa and I've always said I plan to live to be 121-years-young so that means I really have 76 years of life left!  Even looking at the minimum I would say I have at least 25 years to work after getting an education!  So now it is time to get myself healthy and educated to live a productive life!


THE PURPOSE IS . . .

My purpose and long range goal is to become an attorney and pass the bar by the fall of 2023.  Yes, if you did the math, that is a ten-year plan.  It might go faster but I will not stress myself by saying I will be this in seven years.  I'm allowing the cushioned padding to make this purpose come to fruition.  I must work and go to school to pay for school.  This will not be easy nor fast but it will be accomplished.  In order to just get through 2012 and into a routine of school and work there will be things I'll need to do this spring/summer/fall to begin this journey as well as things I'll continue well past this year and into the future as I travel to my destination.

BREAKING IT DOWN . . .

PERSONAL HEALTH and FITNESS
  • Daily in the Word and in Prayer
  • Regularly Attend Church and Attend A Growth Group
  • Wean myself from TV!!!
  • Nutritionally sound meals henceforth - limit whites and carbs
  • Monday through Saturday - walk treadmill aim for a mile or minimum 20 - 30 minutes
  • M/W/F - strength routine with dumbbells
  • Drink 1/2 my body weight in oz of water daily
  • Daily Weigh-in / Weekly Waist-in until I meet my goal of 100 - 110 lbs and 27 inches
  • Sleep 9/10:00 p.m. - 5:00 a.m.  (7/8 hrs) 
  • Keep on top of blood pressure, blood sugar, RA, etc., - keep ahead so I can keep going
  • Lose 180 lbs so I am healthy and can make it to my purpose

FINANCIAL FITNESS
  1. Work consistently 10:00 a.m. - 3:00 p.m. (5 hrs daily) at current part-time job
  2. Find a job with more money/more hours or another part-time job to go with current part-time job, etc. so I can get on top of things (maybe with Clark County or the State of Nevada or maybe for a local attorney)
  3. Sell off all final MK on hand via whatever means (to pay for school)
  4. Sell off anything else that isn't needed (to pay on bills and for school)
FIND A WAY MAKE A WAY:

HOUSEHOLD FITNESS
Step by Step Plan to Clean, Organize and Prep House during the remainder of spring on through summer and into the fall of 2012 to make going to school while working more pleasant and productive.  With strong intentions of all the heavy work being completed by the end of August so that Fall mainly consists of those categories of keeping up on things.

GENERAL CLEANING DETAIL
a.  Vacuum and Steam Clean Bedroom Carpets (February/May/August/November)
b.  Clean baseboards and walls (Jan/Mar/May/July/Sept/Nov)
c.  Clean Oven (4th weekend each month)
d.  Clean Windows: inside and outside (3rd weekend each month)
e.  Clean Door Frames / Door Knobs / Spot Clean Walls (weekly - Sat)
f.  Clean Bathrooms (Tues-once over and Sat-deep)
g.  Vacuum / Sweep / Mop (Tues / Sat)
h.  Laundry (Tues / Sat)

MASTER BEDROOM and BATHROOM
a.  Find all remaining MBR/MBaR boxes in garage to empty (keep/toss/give away concept)
b.  Clear bookshelf in bedroom/clean and add only books from boxes, etc.
c.  Clear MK and items to sell to table in kitchen and post online for sale
d.  Dust and vacuum bedroom
e.  Curtain up in bedroom
f.  Rearrange furniture in bedroom (conducive to rest and reading)
g.  Clear out Closet:  Repair or Give Away or Throw Away
h.  Organize (and empty Bathroom Box in garage) - repair/give/toss

ENTRYWAY and HALLWAY
a.  Empty each box in entry way / hall with same concept of keep/toss/give away.
b.  Move stereo to hallway/entryway
c.  Create wall decor tree to put up Family Genealogy Research picture wall, etc.
d.  Build or get cabinet / case for music to set to right of piano
e.  Decor above piano as I wanted (musical lines/notes/instrument pictures, etc.)

CRAFT ROOM CLOSET
a.  Find all remaining craft boxes in garage and empty (keep/toss/give away concept)  
b.  Remove financial bills and files to filing cabinet in my closet
c.  Organize craft items
d.  Spend at least an hour or two a week crafting to release my mind

KITCHEN and DINING AREA
a.  Find all remaining kitchen/dining boxes in garage sorting through them to decide what to keep/toss/give away
b.  Find/Purchase or Build Cabinet/Wall Unit for Dish Storage in Dining Area
c.  Create space for all remaining kitchen and dining items
d.  Repair all chairs with wood glue and screws that have legs broken
e.  Sand and paint chairs (green)
f.  Sand and paint table (mustard)
g.  Begin garage/estate sale search for items I want to add to kitchen/dining/house
h.  Curtain in dining room window

LIVING ROOM
a.  Find all remaining living room boxes in garage sorting through them to decide what to keep/toss/give away/return to owner
b.  Finish painting baseboards
c.  Obtain new/larger shelving unit for DVD/VCR tapes, etc.
d.  Move existing black shelves to hallway corner for books
e.  Obtain a sturdy hide-a-bed couch
f.   Obtain a coffee table

KIDS ROOMS
a.  Gabrielle and Andrew will maintain their own rooms and return them to their original conditions upon moving out of the house.

YARD
a.  Remove all weeds and grass clumps in back yard
b.  Remove old broken down shed from back yard (maybe replace with a gazebo if HOA approves)
c.  Rent a rototiller to prepare the hard dirt yard for grass
d.  Work up flower beds and maintain existing plants and trees
e.  Lay sod to grow grass in back yard
f.   Clean up rock in front yard
g.  Shrubs or flowers under windows in front yard
h.  Clean up patio area
i.   Blow out dust on BBQ grill and enjoy outdoor grilling this summer/fall

GARAGE
a.  Empty all remaining boxes and clean garage
b.  Create holiday bins in clear plastic tubs
c.  Create other appropriate bins in clear plastic tubs for other storage (sewing/crafts, etc.)

EVENTUALLY and some day.... sooner than later...
a.  Updated electrical box panel to support 2012 not 1979 electrical systems
b.  Electrical work to bedrooms and living room to had lighted ceiling fan to each room
c.  Replace A/C-Heating unit


EDUCATIONAL FITNESS
(Complete my education by the spring of 2023 or sooner AND pass bar by the fall of 2023)

I'll begin by taking two classes in the fall of 2012 and 
then moving on to 3/4 time enrollment afterward.

Complete AA in History/Sociology/Psychology (leaning toward history) at CSN
Complete Dual BA in History/Sociology with minor in Psychology (UNLV or NSC)

And just as crucial as completing each educational step above I will need to achieve and maintain a healthy GPA as well as obtain high scores on the LSAT prior to being able to enter law school.

Complete JD (????? stay local ???? or ????? southern Cali ???? or ????)


SKILLS FITNESS
Formulate and Follow Plan to work on the following skills while I work through my undergraduate years to prepare for LSAT and Law School (below are areas that are covered in an ABA  article I recently read).
  • Analytic / Problem Solving Skills - seek avenues to increase these skills
  • Critical Reading - close reading of complex material in literature, political or economic theory, philosophy, or history
  • Writing Skills - Daily Blog/Journal for strengthening writing skills while expressing myself clearly and concisely.  I also need to seek as many experiences as possible that will require rigorous and analytical writing, including preparing original pieces of substantial length and revising written work in response to constructive criticism.
  • Oral Communication / Listening Abilities - join DAR and Toastmasters (or similar that has contacts to legal community).  Engage myself so that I can lead or present topics for vital communication experience.  Take classes that will also allow me to communicate and listen.
  • General Research Skills - continue to gain computer skills and knowledge to stay on top of electronic research.  Research family genealogy for research practice.  Find other avenues of research/discovery.
  • Task Organization / Management Skills - undertake school projects that require substantial research and writing, or through the preparation of major reports for an employer, a school, or a civic organization
  • Public Service and Promotion of Justice - Participate in public service projects or similar efforts at achieving objectives established for common purposes.   See if I have any skills that can be offered by volunteering at legal aid for Clark County.
